Stephen McLaughlin of Eddie's BBQ Truck on bringing BBQ to the masses

Posted

What made you choose to open a BBQ food truck?
I have always wanted my own restaurant and have also always been a
lover of barbecue. Unfortunately, the high start-up costs associated with a
full-blown restaurant were quite prohibitive. The truck offers an opportunity that is more cost friendly but, most importantly, allows me to bring food to the masses. I named the business after my older brother who has taught me so much over the years.

Where can we look for your truck?

Our truck can be found in the Narragansett and South Kingstown areas. While the truck does go to many of the same spots on a weekly basis, the best way to find where we are is to check the Eddie’s BBQ website or follow us on Facebook or Twitter.

What item on your menu are you best known for?
We’re most known for our Pulled Pork. The Smoked Pork Ribs and Homemade Chili are close seconds.

Are these your favorite items as well?
My personal favorites are the chili and our Brisket Tacos.  I love the chili because it is meatier than most chilis. The Brisket Tacos, well, they’re just awesome. My wife and 20-monthold daughter, however, cannot get enough of the ribs or pulled pork. As a family, we typically enjoy our favorite BBQ items at least once a week.  For me, I eat my food easily three times a week.

What about individuals with more limiting food preferences?
We do understand that not all who want great BBQ are meat eaters. So yes, Eddie’s BBQ does have some fish and vegetarian options. We offer Fish Tacos, Shrimp Tacos, Tofu, and Eggplant. Each gets a dose of our signature BBQ rub, and the Tofu and Eggplant also come drizzled with our delicious Avocado Chipotle Ranch Dressing.

We hear that you are participating in an upcoming food truck event. Tell us more.
With the help of the town and the Narragansett Chamber of Commerce, Eddie’s BBQ and three other local food trucks will be participating in  a weekly event called Food Truck Nights at the Beach (pending final  approval by the Town Council). These food truck nights will be held on Wednesday evenings from 6-10pm in the Narragansett Town Beach north parking lot starting on May 23 and running through August 29. The other food trucks involved in this event are Pizza by Fire, Shukin’ Truck and Roxy’s Lobster.
