These spinach pies were Greek-style, meaning that instead of fluffy pizza dough, the spinach was contained within thin layers of flaky phyllo dough. Each pie was bursting with flavor: We tasted olive oil, egg, onions, garlic, and a mixture of ricotta and feta cheeses. They were so moist and oh so delicious – completely worth the calorie splurge when going back for seconds.
